Ingredients
4 round crunchy bread rolls
4 slices prosciutto
100g Devondale Tasty Cheese, grated
100g roasted red capsicum, cut into strips
4 free-range eggs
baby rocket leaves, to serve
Method
1.
Preheat the oven to 180°c(350 F). Cut and discard the tops from bread rolls.
Remove and discard the soft centre to make a shell. Line with
prosciutto. Add a little of the cheese, then top with the capsicum.
Crack an egg into each and top with the remaining cheese.

Place on a baking tray and cook for 10-12 minutes or until egg is
cooked to your liking. Season with sea salt and cracked black pepper.
Serve with baby rocket.
